Pears & Raspberries with Lavender

Summer time is berry time and our favorites are raspberries. They’re packed with immune-boosting vitamin C as well as manganese, which is key in building strong bones. We blend them with pears and add a touch of lavender, giving it a lovely floral note. It’s great served cold, especially in the current heat. 

 

Ingredients:
2lb firm organic pears
8oz organic raspberries
Organic lavender tea

Method:
Peel and chop the pears, removing the core.
Place into a saucepan and cover with water.
Add a lavender teabag.
Bring the water to the boil and poach the pears until soft, about five to 10 minutes.
Turn off the heat and leave the pears to infuse with the lavender for 30-45 minutes.
Drain the pears, remove the teabag and place in a blender together with the raspberries.
Blend to your desired consistency.
