Zucchini and Peas with Brown Rice and Mint


One of our all-time favorites is back on the menu this month. This fresh purée is bright and colorful to stimulate all of baby’s senses.
And it’s delicious and nutritious: loaded with antioxidants, fiber, magnesium, lutein and zeaxanthin, and vitamins including B1, C, and K, this lovely baby purée aids your little one’s digestion, bone, brain and heart development, as well as eyesight.
Always use brown rather than white rice as this is a whole grain that contains the bran and germ and is much more nutritious.  

2 organic zucchini
1 cup organic peas
½ cup cooked organic brown rice
1 Tbsp chopped organic mint leaves

Cut the zucchini into chunks.
Place in a steamer and cook until soft, about five to eight minutes.
Place the cooked zucchini in a food processor, add the peas, brown rice and mint leaves and blitz to your desired consistency.
