Summer is the season of sweet corn and we're so excited to see one of our favorite veggies all over the farmers markets right now, we've created a special flavor of the month in honor of it: Corn grits with summer vegetables, including zucchini, carrots and, you guessed it, sweet corn! Grits are a natural source of carbohydrates, iron and B vitamins, while sweet corn is loaded with antioxidants and vitamins A and B6 as well as lutein and zeaxanthin, two phytochemicals that promote healthy vision. We add a touch of extra virgin olive oil and basil, making this a lovely summery little meal that is packed with sunshine and goodness.
